中文摘要: 为探讨摇青对夏、秋红茶品质的影响,以毛蟹品种为原料,研究摇青工艺对红茶花香品质形成作用,及其对茶叶理化成分与挥发性成分的影响。结果 表明:夏花香红茶的茶多酚、咖啡碱、可溶性糖含量、游离氨基酸总量显著低于夏红茶,秋花香红茶除了咖啡碱含量相当,其他成分均显著低于秋红茶;夏、秋花香红茶的茶黄素、茶红素含量均低于夏、秋红茶,而茶褐素含量则高于夏、秋红茶。采用顶空固相微萃取-气相色谱-质谱联用(headspace solidphase microextraction-gas chromatography-mass spectrometry,HS-SPME-GC- MS)技术测定红茶挥发性成分发现,种类数量达到49种,包括醇类、醛类、烯烃类、酯类、酮类和其他类。夏、秋花香红茶的挥发性成分总量分别为19.42、11.94 μg/L,相比夏、秋红茶分别提升67.70%、52.88%;其中醇类物质的相对含量最高,占挥发性成分总量的60%左右,夏、秋花香红茶醇类物质分别高出夏、秋红茶74.30%和65.18%;花香红茶中具有花果香属性的苯乙醇、苯乙醛、(Z)-己酸-3-己烯酯、α-法尼烯等挥发性成分的相对含量明显高于红茶。

Abstract:This study investigated the effects of shaking on the quality of summer-autumn black tea manufactured from the Maoxie cultivar, specifically examining its contribution to floral aroma formation and the resultant changes in physicochemical and volatile components. The results showed that the contents of tea polyphenols, caffeine, soluble sugars, and total free amino acids in summer floral black tea were significantly lower than those in summer black tea; in autumn floral black tea, except for a comparable caffeine content, all other components were significantly lower than those in autumn black tea. The content of theaflavins and thearubins in floral black tea was lower than black tea in summer and autumn, while the content of theabrownins was higher. Headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS)analysis of black tea volatile compounds revealed a total of 49 compounds, including alcohols, aldehydes, alkenes, esters, ketones, and others. The total amounts of volatile components in floral black tea were 19.42 and 11.94 μg/L, respectively, representing increases of 67.70% and 52.88% compared to black tea in summerautumn, respectively. Specifically, the relative content of alcohols was the highest, accounting for approximately 60% of the total volatile components. The alcohol content in floral black tea was 74.30% and 65.18% higher than that in black tea in summer-autumn, respectively. The relative content of volatile components with floral and fruity aromas, such as phenylethanol, phenylacetaldehyde, cis-3-hexenyl hexanoate, and α-farnesene in floral black tea was significantly higher than that in black tea.
