中文摘要: 蜂蜜作为一种广泛应用于食品、化妆品、药品和保健品等领域的天然原料,其品质问题备受关注。由于缺乏有效的上市前监测评估,市场上蜂蜜品质参差不齐,这不仅降低消费者对蜂蜜的信任度,也影响其利用率。为提升蜂蜜市场的规范性和消费者信任度,加强蜂蜜品质控制与监管,该文聚焦于蜂蜜真实性与品质检测,重点介绍色谱法、光谱法、质谱法和电化学法等多种鉴定技术的优势及局限性,以期为不同消费群体和应用场景提供技术甄别依据。此外,该文展望蜂蜜品质检测技术的未来发展趋势,旨在为保障蜂蜜品质、维护消费者健康及促进市场稳定竞争提供理论参考。

Abstract:The quality of honey,a natural raw material widely used in food,cosmetics,pharmaceuticals,healthcare products,and other fields,has attracted much attention.Because pre-market monitoring and evaluation lack effectiveness,the quality of honey in the market varies greatly,which not only reduces consumers′ trust in honey but also affects its utilization.In order to enhance the standardization of the honey market and consumer trust,and strengthen the quality control and regulation of honey,this paper focused on honey authenticity and quality testing,highlighting the advantages and limitations of various identification techniques such as chromatography,spectroscopy,mass spectrometry,and electrochemical methods,aiming to provide a technical screening basis for different consumer groups and application scenarios.In addition,the paper looked forward to the future development of honey quality testing technology,aiming to provide theoretical value for safeguarding the quality of honey,maintaining consumer health,and promoting stable competition in the market.
