中文摘要: 以新疆双峰驼驼肉为原料,选择食盐添加量、香辛料添加量、腌制时间和烘烤时间进行单因素和响应面试验,对腊驼肉加工工艺进行优化,并通过测定失重率、pH值、色度值及质构特性,分析腊驼肉加工过程中理化特性及适口性的变化。研究结果表明,腊驼肉的最佳工艺条件:以原料肉质量计,食盐添加量2.6%、香辛料添加量2.7%、腌制时间2.6 d、烘烤温度62 ℃、烘烤时间8.5 h。随着烘烤时间的延长,腊驼肉的失重率增加,pH值升高,色度值降低;腊驼肉加工过程中弹性和内聚性呈现起伏式变化,硬度和咀嚼性呈先降低后升高的趋势,烘烤结束时腊驼肉的硬度和咀嚼性适中。
Abstract:Xinjiang Bactrian camel meat was used as raw material to prepare cured camel meat.Single-factor and response surface experiments were conducted to optimize the processing technology conditions:the addition amount of edible salt,the addition amount of spices,marination time,and baking time.Changes in physicochemical properties and palatability of camel meat during processing were analyzed in terms of the weight loss rate,pH,chromaticity values,and textural properties.The results showed that the optimal process conditions for cured camel meat were as follows:salt addition of 2.6%,spice addition of 2.7%,marination time of 2.6 d,baking temperature of 62 ℃,and baking time of 8.5 h,all calculated based on the quality of the raw meat.As baking time increased,the cured camel meat showed increases in the weight loss rate and pH value and decreases in chromaticity values.During the processing,the springiness and cohesiveness of cured camel meat exhibited fluctuating changes,while the hardness and chewiness first decreased and then increased.At the end of baking,the hardness and chewiness of the cured camel meat were moderate.
