中文摘要: 以沙棘和番茄为主要原料研制沙棘番茄复合饮料,并评价其品质及抗氧化活性。以离心沉淀率、感官评分和透光率为评价指标,采用单因素法和响应面法优化复合饮料配方,测定此条件下复合饮料的总糖含量、总酸含量、微生物含量,以超氧阴离子自由基清除率、羟基自由基清除率评价复合饮料的抗氧化活性。结果表明,沙棘番茄复合饮料的最佳配方为沙棘汁添加量4.70%、番茄汁添加量15.34%、蔗糖添加量3.99%、柠檬酸添加量0.10%、羧甲基纤维素钠(carboxymethylcellulose sodium,CMC-Na)添加量0.10%、果胶酶添加量0.12%,最终感官评分为88.5,离心沉淀率为4%,透光率为80%;总糖含量(以葡萄糖计)为5.0 g/100 mL,总酸含量(以柠檬酸计)为0.23 g/100 mL,细菌总数<100 CFU/mL,大肠菌群指数<3 MPN/100 mL,未检出致病菌,符合国家相关标准及规定。沙棘番茄复合饮料的超氧阴离子自由基清除率为65.63%,羟基自由基清除率为77.93%,表明其具有良好的抗氧化能力。

Abstract:The sea buckthorn-tomato compound beverage was prepared with sea buckthorn and tomato as the main raw materials,and its quality and antioxidant activity were evaluated.With centrifugal precipitation rate,sensory score,and transmittance as evaluation indicators,the single factor method and response surface methodology were used to optimize the formula of the compound beverage.The total sugar content,total acid content,and microbial count of the compound beverage prepared with the optimal formula were measured.The antioxidant activity of the compound beverage was evaluated in terms of superoxide anion radical scavenging rate and hydroxyl radical scavenging rate.The results showed that the optimal formula of the sea buckthorn-tomato compound beverage was composed of 4.70% sea buckthorn juice,15.34% tomato juice,3.99% sucrose,0.10%citric acid,0.10% carboxymethylcellulose sodium (CMC-Na),and 0.12% pectinase.The compound beverage prepared with this formula showed the sensory score of 88.5,the centrifugal precipitation rate of 4%,and the transmittance of 80%.In addition,it had the total sugar content (calculated by glucose) of 5.0 g/100 mL,total acid content (calculated by citric acid) of 0.23 g/100 mL,total bacterial count<100 CFU/mL,and coliform index<3 MPN/100 mL.No pathogenic bacteria were detected.All the indicators above were in accordance with relevant national standards and regulations.The superoxide anion free radical scavenging rate and hydroxyl free radical scavenging rate of the sea buckthorn-tomato compound beverage were 65.63% and 77.93%,respectively,indicating its good antioxidant ability.
