中文摘要: 为优化辣椒来源天然胡萝卜素微囊粉制备工艺,以辣椒来源天然胡萝卜素为原料,通过单因素试验探究变性淀粉用量、植物油用量、乳化时间和均质压力对天然胡萝卜素微囊粉平均粒径及含量的影响,并通过正交试验优化微囊粉的制备工艺。结果表明,天然胡萝卜素微囊粉最佳制备工艺条件为变性淀粉用量30 g、植物油用量13.5 g、乳化时间10 min、均质压力30 MPa。在此条件下,微囊粉中胡萝卜素含量大于1.0%,平均粒径小于600 nm,包埋率大于95%,具有粒径小、水溶性好、着色力强等优点。
Abstract:In order to optimize the preparation process of natural carotene microcapsule powder from capsicum,natural carotene derived from capsicum was used as the raw material.The effects of modified starch dosage,vegetable oil dosage,emulsification time,and homogenization pressure on the average particle size and content of natural carotene microcapsule powder were investigated by single-factor experiments,and the preparation process of the microcapsule powder was optimized by an orthogonal test.The results showed that the optimum preparation conditions were as follows:modified starch dosage of 30 g,vegetable oil dosage of 13.5 g,emulsification time of 10 min,and homogenization pressure of 30 MPa.Under these conditions,the content of natural carotene in the microcapsule powder was more than 1.0%;the average particle size was less than 600 nm,and the embedding rate was more than 95%,with advantages including small particle size,good water solubility,and strong coloring capacity.
