不同品种山楂果实矿质元素含量及品质分析

中文摘要: 为探究不同品种山楂果实品质的差异,以“大货山楂”“小金星”“莱芜黑红”“大五棱”“清源磨盘”“安泽大果”“甜红子”“大金星”“金如意”9个山楂品种为试验材料,测定果实的理化性质和矿质元素含量,采用相关性分析、聚类分析等方法,研究不同品种山楂的品质及矿质元素特性。结果表明,“大五棱”的果实最大,“金如意”的果实最小。不同品种的山楂果实色差较小,灰分和粗脂肪含量差异较大。不同品种的山楂果实矿质元素含量存在显著性差异,常量元素中K、Ca元素的含量较高,微量元素中Fe、B、Zn、Mn元素含量较高。矿质元素与基本品质间存在显著相关性,影响果实的大小及外观色泽。经聚类分析将9个试验品种分为3类,不同类群间的矿质元素含量及理化指标存在显著差异。
Abstract:The fruit quality was compared among different varieties of hawthorn.The physicochemical properties and mineral element content of the fruits of nine hawthorn varieties(′Dahuoshanzha′,′Xiaojinxing′,′Laiwuheihong′,′Dawuling′,′Qingyuanmopan′,′Anzedaguo′,′Tianhongzi′,′Dajinxing′,and ′Jinruyi′) were determined.Correlation analysis and cluster analysis were adopted to investigate the quality and mineral element characteristics of different hawthorn varieties.The results indicated that ′Dawuling′ had the largest fruits,while ′Jinruyi′ had the smallest fruits.The chromatic aberration of hawthorn fruits was small among different varieties,while the content of ash and crude fat exhibited significant differences.There were significant disparities in the mineral element content among different varieties.Among the macroelements,K and Ca had high content.Among the microelements,Fe,B,Zn,and Mn had high content.Mineral elements had significant correlations with basic quality,affecting the size and appearance of fruits.Through cluster analysis,the nine varieties were classified into three categories,which had significant differences in the mineral element content and physicochemical indicators.
