中文摘要: 为研究酸笋发酵过程和抑菌处理对其有机酸的影响,采用高效液相色谱法、pH计法测定不同发酵阶段(发酵0、2、6、18、22、32、62 d)及不同抑菌处理条件(冷藏、灭菌、加脱氢乙酸钠、加山梨酸钾、加脱氢乙酸钠和山梨酸钾复合抑制剂)下酸笋中有机酸含量及pH值。结果表明,随发酵时间延长,乳酸、乙酸、柠檬酸含量逐渐增加,pH值逐渐降低;发酵62 d后乳酸、乙酸、柠檬酸含量分别为8.16、1.55、0.35 mg/g,pH值整体由6.06降为4.18。与未经过抑菌处理的自然发酵97 d酸笋相比,冷藏处理的酸笋乳酸、乙酸、柠檬酸含量均下降较多(分别下降10.61、1.53、0.22 mg/g),pH值升高0.40,有效抑制了后续发酵进程,整体抑菌效果优于其他4种处理方式。
Abstract:To investigate the effects of fermentation process and antibacterial treatments on the organic acids in sour bamboo shoots,high performance liquid chromatography (HPLC) and pH meter were used to determine the organic acid contents and pH values of sour bamboo shoots at different fermentation stages (0,2,6,18,22,32,and 62 days of fermentation) and under different antibacterial treatment conditions (refrigeration,sterilization,addition of sodium dehydroacetate,addition of potassium sorbate,and addition of compound inhibitor of sodium dehydroacetate and potassium sorbate).The results showed that with the extension of fermentation time,the contents of lactic acid,acetic acid,and citric acid gradually increased,while the pH value gradually decreased.After 62 days of fermentation,the contents of lactic acid,acetic acid,and citric acid were 8.16,1.55,and 0.35 mg/g,respectively,and the pH value decreased from 6.06 to 4.18 overall.Compared with those in naturally fermented sour bamboo shoots without antibacterial treatment for 97 days,the contents of lactic acid,acetic acid,and citric acid in refrigerated sour bamboo shoots decreased significantly (by 10.61,1.53,and 0.22 mg/g,respectively),and the pH value increased by 0.4.This effectively inhibited the subsequent fermentation process,and the overall antibacterial effect was superior to the other four treatment methods.
