低钠盐替代对实际生产中徽州刀板香品质特性的影响

中文摘要: 刀板香作为典型的徽派腌腊肉制品,其传统生产工艺中食盐用量偏高导致产品钠含量过高,是制约其产业可持续发展的关键瓶颈。该文探究低钠盐替代传统日晒盐(替代比例为14.32%)对刀板香品质的影响。研究结果表明:低钠盐组刀板香的钠含量较日晒盐组显著降低20.61%(P<0.05),而钾、锌元素含量则分别为日晒盐组的2.41倍和3.48倍(P<0.05);两组样品的蒸煮损失率与剪切力值无显著差异(P>0.05),但低钠盐组刀板香瘦肉部位的色泽参数更优,质构特性更理想,且挥发性风味化合物种类多于日晒盐组(低钠盐组21种、日晒盐组17种),其中醛类化合物总量及挥发性风味物质总量均显著高于日晒盐组(P<0.05);两组产品的各项安全指标均符合国家食品安全标准的规定,且低钠盐腌制可显著降低硫代巴比妥酸值(P<0.05)。综上,采用低钠盐腌制工艺可在一定程度上改善刀板香的综合品质特性,改善瘦肉色泽与风味物质组成,在实际生产中具有潜在的应用价值与推广前景。
Abstract:Daobanxiang,a typical Huizhou-style cured meat product,faces a critical bottleneck in its sustainable industrial development due to excessive sodium content resulting from high salt usage in traditional production processes.Grounded in practical production,this study systematically investigated the effect of replacing traditional salt with low-sodium salt (replacement ratio is 14.32%) on the quality characteristics of Daobanxiang through comparative experiments.The results demonstrated that the sodium content in the lowsodium salt group was significantly reduced by 20.61% compared to the control group (P<0.05),while potassium and zinc content was 2.41 and 3.48 times higher than those in the control group,respectively(both P<0.05) with no statistically significant differences in cooking loss rate and shear force value between the two groups (P>0.05).However,the low-sodium salt group exhibited superior color parameters in the lean meat portion,improved texture properties,and a greater variety of volatile flavor compounds (low-sodium salt group:21 types and control group:17 types).Notably,the total aldehyde compounds and total volatile flavor substances were significantly higher in the low-sodium salt group (P<0.05).All safety indicators of both groups complied with the National Food Safety Standard,and low-sodium salt curing significantly reduced the thiobarbituric acid reactive substances(TBARS) value(P<0.05).In conclusion,the application of low-sodium salt curing technology can improve the comprehensive quality characteristics of Daobanxiang to a certain extent,which enhanced lean meat color and the composition of flavor substances,presenting potential application value and promotion prospects in practical production.
