中文摘要: 为改善马铃薯淀粉(potato starch,POS)特性,研究不同低温等离子体(cold plasma,CP)处理时间(30、60、90、120 s)对POS直链淀粉和支链淀粉含量、粒径、Zeta电位、溶解度、膨胀度及流变特性的影响。结果表明:对照组POS直链淀粉含量为23.73%,支链淀粉含量为73.72%,溶解度和膨胀度较低,粒径为5.20 μm,表面结构完整、光滑,透明度低(17.20%)。CP处理导致POS直链和支链淀粉解聚,直链淀粉和支链淀粉含量和粒径显著减小(P<0.05),颗粒表面变得粗糙并出现破损。改性后POS功能特性发生变化,透明度提高至53.66%(90 s),溶解度和膨胀度增大,黏度降低。随着CP处理时间的延长,其对POS的影响加剧,但处理90 s后,对POS影响不明显。
Abstract:To improve the properties of potato starch (POS),this study investigated the effects of cold plasma(CP) treatment duration(30,60,90,120 s) on POS characteristics,including amylose and amylopectin content,particle size,Zeta potential,solubility,swelling power,and rheological properties.Results indicated that POS in the control group exhibited an amylose content of 23.73%,an amylopectin content of 73.72%,low solubility and swelling power,a particle size of 5.20 μm,an intact and smooth surface morphology,and low transparency (17.20%).CP treatment induced depolymerization of both amylose and amylopectin chains,significantly reducing amylose and amylopectin content,as well as particle size (P<0.05).Granule surfaces became rough with pitting.After modification,POS functional properties were altered,including a significant increase in transparency (to 53.66% at 90 s),increased solubility and swelling power,and decreased viscosity.The impact of CP treatment on POS was intensified with prolonged exposure time.However,no significant additional effects were observed beyond 90 s of treatment.
