中文摘要: 该研究基于市售野樱莓冻干固体饮料感官评价结果与工艺分析,针对野樱莓冻干速溶固体饮料进行感官关键工艺优化并进行感官评价。结果表明,维生素C(vitamin C,VC)和β-环糊精(β-cyclodextrin,β-CD)两种护色剂联合护色能够达到最好的色泽保持效果,护色后野樱莓冻干速溶固体饮料的总花青素含量、总多酚含量及总黄酮含量分别为3.37、35.18、2.71 mg/g。以质量比1∶1.5的白砂糖和三氯蔗糖复配作为甜味剂添加后野樱莓即溶冻干块的酸甜度、总体可接受性最高,以质量比1∶1.5的白砂糖和冰糖复配作为甜味剂添加的野樱莓即溶冻干粉在酸甜度、口感、香气、外观和总体可接受性更佳。
Abstract:Based on the sensory evaluation and process analysis of commercially available freeze-dried solid beverages of A.melanocarpa,this study optimized key sensory processes for freeze-dried instant solid beverages of A.melanocarpa and conducted sensory evaluations.Results indicated that the combined color protection treatment using vitamin C (VC) and β-cyclodextrin (β-CD) achieved the best color retention effect.The total anthocyanin,total polyphenol,and total flavonoid content of the freeze-dried instant solid beverages of A.melanocarpa after color protection were 3.37,35.18,and 2.71 mg/g,respectively.When a mixture of white granulated sugar and sucralose in mass ratio of 1∶1.5 was added as the sweetener,the freeze-dried instant blocks of A.melanocarpa exhibited the highest sweetness,sourness and overall acceptability.Meanwhile,the instant freeze-dried powder of A.melanocarpa,with a mixture of white granulated sugar and rock sugar in mass ratio of 1∶1.5 ratio as a sweetener,demonstrated better sweetness,sourness,taste,aroma,appearance and overall acceptability.
