中文摘要: 杂环胺(heterocyclic aromatic amines,HCAs)是一类具有杂环结构的有机化合物,其对食品营养价值具有破坏作用,并可诱导细胞突变,甚至引发肿瘤。鉴于其对消费者健康构成的潜在威胁,研究者近年来致力于开发HCAs的减控方法并评估其风险,以保障食品安全。该文系统探讨HCAs的种类,及其在肉类及肉制品中的生成机制、作用机理、潜在危害、减控策略,并对未来研究方向与应用前景进行展望。
Abstract:Heterocyclic aromatic amines (HCAs) are a class of organic compounds with heterocyclic structures. They can compromise the nutritional value of food and induce cellular mutations, potentially leading to tumor formation. In view of their potential threat to consumer health, researchers have recently focused on developing strategies to reduce and control HCAs, as well as evaluating their associated risks to ensure food safety. This paper systematically reviewed the types of HCAs, their formation mechanisms in meat and meat products, molecular mechanisms of action, potential hazards, and mitigation strategies, and provides an outlook on future research directions and potential applications.
