中文摘要: 基于电子鼻与电子舌技术,结合化学计量学方法(主成分分析、线性判别分析、欧氏距离分析)分析发酵苹果粉、发酵红枣粉、发酵南瓜粉和发酵番茄粉在气味与滋味品质上的差异。结果表明:电子鼻分析显示,4种发酵粉在气味组成上存在明显差异,烷烃、醇类、酮类、醛类、含碳类物质等是造成发酵果蔬粉气味差异的主要物质。电子舌检测分析表明,4种发酵果蔬粉在滋味特征上均表现出明显差异。

Abstract:This study utilized electronic nose (E-nose) and electronic tongue (E-tongue) technologies, combined with chemometric methods, including principal component analysis (PCA), linear discriminant analysis (LDA), and Euclidean distance analysis, to differentiate the odor and taste profiles of fermented apple, jujube, pumpkin, and tomato powder. The results showed that E-nose analysis revealed significant differences in odor composition among the four fermented powder. Key compounds contributing to these differences included alkanes, alcohols, ketones, aldehydes, and carbon-containing compounds. Meanwhile, E-tongue analysis demonstrated that all four fermented fruit and vegetable powder exhibited significant differences in taste characteristics.
