中文摘要: 该文采用电子鼻、固相微萃取结合气相色谱-质谱(solid phase microextraction-gas chromatography-mass spectrometry, SPME-GC-MS)等技术,结合气味活度值(odor activity value, OAV),对不同处理方式制备的梅干菜挥发性风味物质进行分析。结果表明,梅干菜在传感器W2W、W1W和W1S上有较高的响应值。梅干菜中共检测出118种挥发性物质,分别有醛类、醇类、萜烯类、酸类、酯类、酚类、酮类和芳香类化合物,其中酯类物质种类最多,酸类物质含量最多。苯甲醛和乙酸的OAV较高,即对香气贡献较大,赋予梅干菜花香、果香和清甜香。对梅干菜香气成分影响最大的是护色处理,相对于热风干燥,真空冷冻干燥能呈现更多的香气物质。

Abstract:The electronic nose, solid phase microextraction-gas chromatography-mass spectrometry(SPMEGC-MS) and odor activity value (OAV) were employed to analyze the volatile flavor substances of dried pickled mustard prepared by different methods. The results showed that the sensors W2W, W1W, and W1S had higher response values. A total of 118 volatile substances were detected in the samples, including aldehydes,alcohols, terpenes, acids, esters, phenols, ketones, and aromatic compounds, among which esters were the richest and acids were the most abundant. Benzaldehyde and acetic acid with higher OAV had greater contributions to the aroma, endowing dried pickled mustard samples with the plum flower, fruit, and clear sweet aroma. Color preservation demonstrated the greatest influence on the aroma. Compared with that prepared by hot air drying, the dried pickled mustard prepared by vacuum freeze-drying had increased aroma substances.
