微波预处理对浓香型菜籽油品质的影响

中文摘要: 该文采用单因素试验和正交试验,以出油率与色度为指标,对微波预处理后的浓香型菜籽油进行工艺优化,并对其品质进行分析。结果表明,以出油率为指标时,最佳工艺为炒制温度130 ℃、炒制时间20 min、炒制湿度6.5%,此时油菜籽出油率最高,为38.13%;以色度为指标时,最佳工艺条件为炒制温度110 ℃、炒制时间10 min、炒制湿度7.5%,此时油菜籽色度最好,吸光度最低,为0.425。根据极差分析可知,炒制湿度对菜籽油出油率、色度的影响较大;根据方差分析可知,炒制温度和炒制湿度对色度具有显著性影响(p<0.05)。浓香型菜籽油中共检测到15种主要脂肪酸,相对含量最高的是不饱和脂肪酸,为90.69%~93.24%。相比于短时微波冷榨处理,长时微波冷榨处理得到的菜籽油的饱和脂肪酸含量和不饱和脂肪酸含量更低。油粕中共检测到8种主要成分,相对含量最高的成分是中性洗涤纤维素,为23.10%~51.39%。
Abstract:Single-factor experiments and orthogonal experiments were conducted to optimize the microwave pretreatment process for fragrant rapeseed oil, with the oil yield and chromaticity as the indicators. The quality of the pretreated oil was analyzed. The results showed that when oil yield was taken as the indicator, the optimal process was as follows: roasting at 130 ℃ and the humidity of 6.5% for 20 min, at which the oil yield of rapeseed was the highest, reaching 38.13%. When chromaticity was taken as the indicator, the optimal process was as follows: roasting at 110 ℃ and the humidity of 7.5% for 10 min, at which the rapeseed oil demonstrated the best chromaticity and the lowest absorbance (0.425). According to the range analysis, roasting humidity had the greatest influences on the yield and chromaticity of rapeseed oil. According to the analysis of variance, roasting temperature and humidity affected the chromaticity of rapeseed oil (p<0.05). A total of 15 major fatty acids were detected in the fragrant rapeseed oil, with unsaturated fatty acids showing the highest relative content, ranging from 90.69% to 93.24%. Compared with short-time microwave cold pressing, longtime microwave cold pressing produced rapeseed oil with decreased content of saturated fatty acids and unsaturated fatty acids. A total of 8 major components were detected in the rapeseed meal, with neutral detergent fiber demonstrating the highest relative content, ranging from 23.10% to 51.39%.
