中文摘要: 该文参考“扁鹊三豆饮”,以黑豆、绿豆、赤小豆为主要原料,研制三豆饮饮料。采用单因素和响应面试验,以多酚、黄酮提取率为指标,优化三豆饮的水提工艺。三豆饮最佳水提工艺参数为提取温度81 ℃、液料比7∶1 (mL/g)、浸泡时间64 min、提取时间 210 min。在三豆饮水提液中添加食品添加剂,以感官评分为指标,采用单因素和正交试验优化三豆饮饮料的风味口感。三豆饮饮料最佳配方为食盐添加量0.10 g/100 mL、白砂糖添加量2.00 g/100 mL、柠檬酸添加量0.02 g/100 mL。在最佳工艺和配方条件下,制备的三豆饮饮料的感官评分为89,多酚含量为0.44 mg/mL,黄酮含量为0.96 mg/mL,多糖含量为36.01 mg/mL,pH值为5.29,可溶性固形物含量为3.37%,菌落总数小于1 CFU/mL。稀释10倍的三豆饮饮料DPPH自由基清除率高达80.58%,羟自由基清除率为60.79%,ABTS+自由基清除率为88.72%,表现出较强的抗氧化活性。

Abstract:This study developed a triple bean beverage using black beans, mung beans, and adzuki beans as primary ingredients, referencing the ancient ′Bian Que Triple Bean Beverage′. Single-factor and response surface methodology (RSM) experiments were employed to optimize the water extraction process of the triple bean beverage, with polyphenols and flavonoids extraction rates as evaluation indices. The optimal water extraction parameters were determined as follows: extraction temperature at 81 ℃, liquid-to-solid ratio of 7∶1 (mL/g),soaking time of 64 min, and extraction time of 210 min. Food additives were incorporated into the triple beans′aqueous extract. Single-factor and orthogonal experiments were conducted to optimize the flavor and mouthfeel of the triple bean beverage, using sensory evaluation as the criterion. The optimal formulation was established as salt addition of 0.10 g/100 mL, sucrose addition of 2.00 g/100 mL, and citric acid addition of 0.02 g/100 mL.Under the optimal processing and formulation conditions, the prepared triple bean beverage exhibited the following characteristics: sensory score of 89, polyphenols content of 0.44 mg/mL, flavonoids content of 0.96 mg/mL,polysaccharide content of 36.01 mg/mL, pH of 5.29, soluble solids content of 3.37%, and total bacterial count below 1 CFU/mL. The 10-fold diluted triple bean beverage demonstrated significant antioxidant activity, with DPPH radical scavenging rate reaching 80.58%, hydroxyl radical scavenging rate reaching 60.79%, and ABTS?radical scavenging rate reaching 88.72%.
