中文摘要: 为开发具有功能特性的橙橘果汁凉茶饮料,利用药食同源植物(山楂、甘草、菊花)促进乳酸菌发酵橙橘果汁来优化橙橘果汁凉茶饮料的品质,并对其体外降血脂和降血糖活性进行研究。通过单因素与正交试验,确定橙橘果汁凉茶饮料的最佳工艺组合,并测定其功能特性的各项指标。结果表明,果汁添加量30%,菊花、甘草、山楂混合浓缩液添加量5%,白砂糖添加量14%,乳酸菌添加量2% 为最优组合,其中白砂糖添加量对产品的感官品质影响最大。橙橘果汁凉茶对胆固醇、甘油三酯、牛磺胆酸盐的半数有效浓度(half maximal effective concentration,EC50)分别为39.63、21.90、11.73 mg/mL;对α-淀粉酶、α-葡萄糖苷酶的半数抑制浓度(half maximal inhibitory concentration,IC50)分别为16.49、17.29 mg/mL,其中橙橘果汁凉茶与牛磺胆酸盐的结合能力较强,对降血糖、降血脂也起到辅助作用。
Abstract:An orange juice-based herbal tea beverage with functional properties was developed with the medicinal plants with food properties(hawthorn, licorice, and chrysanthemum) to promote lactic acid bacteria fermentation of orange juice, which could optimize the quality of the beverage. Additionally, the in vitro blood lipid-lowering and blood glucose-lowering activities of the beverage were investigated. Through single-factor and orthogonal experiments, the optimal formula of the orange juice-based herbal tea beverage was determined, and the functional properties of the beverage were evaluated. The results indicated that the optimal formula was composed of 30% juice, 5% mixed concentrate of chrysanthemum, licorice, and hawthorn, 14% white granulated sugar, and 2% lactic acid bacteria. The content of white granulated sugar had the greatest impact on the sensory quality of the product. The half maximal effective concentration (EC50) values of the orange juice-based herbal tea against cholesterol, triglycerides, and taurocholate were 39.63, 21.90, and 11.73 mg/mL, respectively. The half maximal inhibitory concentration(IC50) values against α-amylase and α-glucosidase were 16.49 mg/mL and 17.29 mg/mL, respectively. The orange juice-based herbal tea exhibited strong binding capacity to taurocholate and played an auxiliary role in lowering blood glucose and blood lipid levels.
