中文摘要: 为探究多糖类可食性涂膜材料对龙眼干贮藏品质的影响,以果胶、壳聚糖、海藻酸钠3种多糖为涂膜材料,研究其对龙眼干贮藏过程中水分、质构、色泽、营养以及抗氧化活性的影响。结果表明:在整个贮藏期间,对照组和涂膜处理组龙眼干的水分含量、水分活度、硬度、还原糖、总酚、总黄酮含量等品质指标均存在较大的上下波动,色泽逐渐变暗,抗坏血酸含量和抗氧化活性逐渐降低。与对照组相比,涂膜处理后龙眼干抗坏血酸降解速率和色泽褐变加快,色泽变化动力学分析显示,对照组的褐变反应速率最低,果胶、壳聚糖、海藻酸钠3种涂膜材料在浓度为0.25%条件下具有加速褐变的作用;但在营养物质保留方面,在龙眼干贮藏中后期(60 d后)涂膜处理对总酚和总黄酮的降解具有一定的抑制作用。
Abstract:This study aimed to explore the effect of polysaccharide-based edible coatings on the storage quality of dried longan. Pectin, chitosan, and sodium alginate were selected as coating materials to analyze their effects on moisture, texture, color, nutrition, and antioxidant activity of dried longan during storage. The results showed relatively large fluctuations in moisture content, water activity, hardness, reducing sugar, total phenols, total flavonoids, and other quality indicators of longan samples from the control group and coatingtreated group during the entire storage period. Additionally, the color gradually became darker, while ascorbic acid and antioxidant activities were gradually decreased. Compared with the control group, the ascorbic acid degradation rate and color browning rate were accelerated in dried longan after coating treatment. The kinetic analysis of color changes indicated that the browning reaction rate was the lowest in the control group. At a concentration of 0.25%, pectin, chitosan, and sodium alginate coatings could accelerate browning. However, in terms of nutrient retention, coating treatment had a certain inhibitory effect on the degradation of total phenols and total flavonoids in the middle and late storage stages (after 60 days) of dried longan.
