中文摘要: 为探究不同种类多糖对藏羊肉贮藏过程中食用品质的影响,以藏羊后腿肉为研究对象,将其制成肉糜后向其中分别添加3种多糖(魔芋葡甘露聚糖、燕麦-β-葡聚糖、壳聚糖),并在4 ℃冰箱中贮藏0、2、4、6、8 d,测定贮藏期间藏羊肉糜水分含量、pH值、色度、肉色稳定性、蒸煮损失率、出品率、质构特性、动态流变性、感官品质及乳化稳定性等指标变化,明确不同种类多糖对藏羊肉糜贮藏过程中食用品质的影响并筛选出最佳多糖种类。结果表明,与空白组相比,添加3种多糖均对肉糜的保水性、pH值、延缓褐变、出品率以及感官品质等存在积极影响;添加壳聚糖对肉糜出品率具有显著提高作用(P<0.05),并能维持肉糜的pH值,燕麦-β-葡聚糖能显著提高肉糜动态流变性(P<0.05)。结合各项指标分析可知,添加壳聚糖对藏羊肉食用品质的影响效果最好。综上,藏羊肉中添加多糖可以在一定程度上提高肉糜的食用品质。

Abstract:The effects of different kinds of polysaccharides on the edible quality of minced Tibetan mutton during storage were evaluated. The hind leg meat of Tibetan sheepwas used to prepare the minced Tibetan mutton,which was then added with three different polysaccharides (konjac glucomannan, oat β-glucan, and chitosan)and stored in a 4 ℃ refrigerator for 0, 2, 4, 6, and 8 days. The changes in moisture content, pH, color parameters, meat color stability, cooking loss, yield, textural properties, dynamic rheology, sensory quality, and emulsification stability of the minced meat during storage were determined and analyzed. The effects of different kinds of polysaccharides on the quality of minced Tibetan mutton during storage were assessed and the best polysaccharide was selected. The results showed that compared with the blank group, the addition of three polysaccharides had positive effects on water retention, pH, retarding browning, antioxidant effect, yield,and sensory quality of the minced meat. In other aspects, the addition of chitosan increased the meat yield (P<0.05) and maintained the pH value of meat, and oat β-glucan improved the dynamic rheology of meat (P<0.05). The comprehensive analysis indicated that adding chitosan had the best effect on the edible quality of Tibetan mutton. The above findings show that adding polysaccharides can improve the edible quality of minced Tibetan mutton to a certain extent.
