中文摘要: 目前世界范围内发现的食源性致病菌高达250余种,近年来部分地区开始重视对于食源性致病菌的检测,研究得到了部分食源性疾病的病因,然而大部分传统的食品快检技术均存在技术难题,不利于对食品样品的检测。该文综述应用等温扩增技术、微流控芯片以及电化学传感器3种方法对致病菌的测量效果,探讨不同快检技术的应用前景,与传统快检技术相比,这3种方法更高效,且灵敏度更高,对专业素养要求较低,适用于即时检测,同时,具有便携性,有利于海关对食品微生物的监测,可降低成本。中国进出口食品繁多,对于病原体筛查的需求量日益增长,以上3种方式在未来的海关监察中当占据主流地位。
Abstract:Food safety has always been a focal issue for human health. Currently,more than 250 foodborne pathogens have been identified worldwide. It was not until recent years that some regions began to attach importance to the detection of foodborne pathogens and the causes of some foodborne diseases were gradually clarified. However,most conventional rapid food detection methods had technical limitations,which were not conducive to the detection of food samples. Three methods (isothermal amplification technology,microfluidic chips,and electrochemical sensors) for pathogen detection were reviewed,and the application prospects of different rapid detection technologies were discussed. Compared with conventional rapid detection technologies,these three methods had high efficiency,high sensitivity,and low requirements for professional literacy,being suitable for point-of-care testing. Meanwhile,these three methods had portability,which had a positive impact on the monitoring of food microorganisms at customs and can reduce costs. With the numerous import and export foods in China,the demand for pathogen screening is increasing day by day. These three methods are expected to occupy a mainstream position in future customs supervision.
