中文摘要: 阿拉伯木聚糖(arabinoxylan,AX)是麦麸中一种重要的非淀粉多糖,具备良好的益生功能,受到全世界的广泛关注,在食品工业应用前景广阔。近年来,众多学者对麦麸AX的纯化方法进行广泛研究,不同的纯化方法对麦麸AX中蛋白质、淀粉等杂质的去除效果具有不同影响。提纯的麦麸AX可选择性地促进肠道中双歧杆菌、乳酸杆菌等有益微生物的生长,改善肠道健康。目前,已有相关研究证实,相比于菊粉、低聚果糖等可溶性膳食纤维,麦麸AX具有更好的益生功能。该文重点介绍国内外近年来有关麦麸AX纯化及其益生功能的研究进展,以期为麦麸AX产品的开发与利用提供一定的理论参考。
Abstract:Arabinoxylan (AX) is an important non-starch polysaccharide from wheat bran. AX has been paid more attention worldwide for its better prebiotic function and has promising applications in the food industry.The purification methods of AX have been extensively studied in recent years,and different purification methods show different effects on the removal of protein,starch,and other impurities in AX. Purified AX can selectively promote the growth of beneficial microorganisms such as Bifidobacterium and Lactobacillus in the intestinal tract and improve intestinal health. Currently,relevant studies have reported that AX has better prebiotic functions than soluble dietary fibers such as inulin and oligofructose. This review mainly focused on the recent research progress in China and abroad on the purification of wheat bran AX and its prebiotic functions,providing some theoretical references for the development and utilization of AX products.
