中文摘要: 多糖是广泛存在于生物体内的天然活性物质,具有多项生物活性。相较于化学合成药品,多糖作为功能性“添加剂”应用于各领域时,展现出更稳定、安全、绿色及健康的优势。近年来,多糖提取技术持续发展,已成为学术研究的热点,其中超声波辅助提取方法运用的趋势也不断加强。该文系统总结并分析不同植物多糖提取工艺之间的优缺点,探讨各类工艺对所提植物多糖生物活性的影响,同时重点研究超声波技术对不同植物多糖的提取率、理化性质和免疫活性的影响,阐述不同植物多糖在食品生产领域的应用现状。该文为超声波辅助提取多糖在临床应用、食品生产、加工等领域的实践提供理论参考与技术支撑。
Abstract:Polysaccharides are recognized as natural active substances widely present in living organisms and possess multiple biological activities. Compared to chemically synthesized drugs,polysaccharides,as functional ′additives′,demonstrate more stable,safe,green,and healthy advantages when they are applied in various fields. In recent years,polysaccharide extraction technology has continued to develop and has become a hot topic in academic research. The trend of using ultrasound-assisted extraction methods also increases. This paper systematically summarized and analyzed the advantages and disadvantages of different polysaccharide extraction processes,explored the effect of various processes on the biological activity of the extracted polysaccharides,and focused on the effects of ultrasound technology on the extraction yield,physical and chemical properties,and immunological activity of different polysaccharides. It also discussed the current application status of different polysaccharides in food production. This paper provides theoretical references and technical support for the practical application of ultrasound-assisted polysaccharide extraction in clinical practice,food production,and processing.
