黄果梨枸杞复合果酒澄清剂的筛选及工艺优化

中文摘要: 为得到澄清稳定的黄果梨枸杞复合果酒,利用明胶、皂土、壳聚糖、硅藻土及果胶酶5种澄清剂对果酒进行处理,测定其色度及透光率,并对澄清后果酒的蛋白质稳定性、褐变指数、微生物稳定性及相关理化指标进行测定辅助筛选,最后采用响应面试验对黄果梨枸杞复合果酒澄清工艺进行优化。结果表明,经皂土处理后果酒在以下几个方面具有优势:离心沉淀率(1.84±0.01)%,透光率(97.72±0.20)%,可溶性固形物含量(16.45±0.05)°Brix,黄酮含量(554.97±1.08)mg/L,总酚含量(1 115.94±1.16)mg/L,总糖含量(30.02±0.34)g/L。因此,选择皂土为最佳澄清剂,澄清工艺条件为澄清时间24 h、澄清温度25 ℃、皂土添加量1.6 g/L,此时果酒的透光率最高达98.38%。

Abstract:To obtain clarified and stable Pyrus bretschneideri Rehd.-wolfberry composite fruit wine,five clarifiers (gelatin,bentonite,chitosan,diatomaceous earth,and pectinase) were used to treat the composite fruit wine,and the color and light transmittance of the composite fruit wine were measured. Furthermore,the protein stability,browning index,microbial stability,and related physicochemical indexes of the clarified fruit wine products were determined to assist the screening. Finally,the response surface test was conducted to optimize the clarification process of the composite fruit wine. The results showed that the composite fruit wine treated with bentonite had advantages in the following aspects:centrifugal sedimentation rate of(1.84±0.01)%,light transmittance of (97.72±0.20)%,soluble solids of (16.45±0.05)°Brix,flavonoids of (554.97±1.08) mg/L,total phenols of(1 115.94±1.16) mg/L,and total sugar of(30.02±0.34) g/L. Therefore,bentonite was selected as the optimal clarifier,and the clarification process conditions were optimized as follows:clarification time of 24 h,clarification temperature of 25 ℃,and bentonite addition amount of 1.6 g/L. At this time,the light transmittance of the composite fruit wine reached up to 98.38%.
