中文摘要: 淡水鱼因其肉质细嫩、营养丰富等特点深受消费者喜爱,但腥味的存在一直制约其工业化应用。肌原纤维蛋白作为淡水鱼蛋白质的主要蛋白,对腥味物质的吸附及释放起着至关重要的作用。该文综述了淡水鱼腥味形成途径及鉴定方法,基于蛋白质—腥味相互作用探讨不同加工方式对腥味物质释放的作用机制,并结合腥味形成途径制定靶向去腥策略,为后续改进淡水鱼脱腥技术提供新的见解,旨在推动水产品行业健康发展。
Abstract:Freshwater fish are popular among consumers for their tender and nutritious meat, but the presence of fishy odor restricts their industrial application. As the main protein of freshwater fish, myofibrillar protein plays a crucial role in the adsorption and release of fishy odor compounds. This study reviewed the formation pathways and identification methods of fishy odor in freshwater fish, explored the mechanisms of different processing methods on the release of fishy odor compounds based on protein and fishy odor interactions, and developed a targeted deodorization strategy by combining fishy odor formation pathways, providing new insights for the subsequent improvement of deodorization techniques for freshwater fish and aiming to promote the healthy development of the aquatic products industry.
