中文摘要: 为了解广西本地食用菌重金属元素的含量水平及特征,评价其食用安全性,采集广西本地生长的食用菌11类,采用密闭高压消解-电感耦合等离子体质谱法分析其中Pb、Cd、As、Cr、Ni、Hg、Se和Rb的含量,并利用靶标危害系数法(target hazard quotients,THQ)对食用菌的膳食暴露风险进行评估。结果表明,不同元素的含量差异非常大,食用菌中Pb、Cd、As、Cr、Ni、Hg、Se和Rb的平均含量分别为0.174、0.177、0.191、0.071、0.086、0.029、0.054 mg/kg和6.556 mg/kg;依据GB 2762—2022《食品安全国家标准 食品中污染物限量》,食用菌中的Pb、Cd、As、Cr、Ni、Hg、Se和Rb含量均未超标。11类食用菌的5种重金属(Pb、Cd、As、Cr、Hg)复合风险值(total target hazard quotients, TTHQ)均小于1,成人膳食摄入食用菌的重金属T值和Q值普遍大于儿童,其中,成人和儿童食用姬松茸的健康风险指数(Q值)最高值分别为 0.067 1和 0.029 6。采集广西市售的11类44份食用菌样品中重金属经膳食途径摄入的风险较低,对人体健康的影响不明显。

Abstract:The levels and characteristics of heavy metals in edible mushrooms in Guangxi were studied to evaluate the food safety. The content of Pb, Cd, As, Cr, Ni, Hg, Se, and Rb in 11 edible mushroom species in Guangxi was determined by inductively coupled plasma mass spectrometry with sealed high-pressure digestion, and target hazard quotients(THQ) was adopted to evaluate dietary exposure risks. The results showed significant differences in the content of different heavy metals. The average content of Pb, Cd, As, Cr, Ni,Hg, Se, and Rb in edible mushrooms was 0.174, 0.177, 0.191, 0.071, 0.086, 0.029, 0.054, and 6.556 mg/kg,respectively. According to the National Food Safety Standard-Maximum Levels of Contaminants in Foods(GB 2762—2022), the content of Pb, Cd, As, Cr, Ni, Hg, Se, and Rb in the edible mushrooms did not exceed the limits. The total target hazard quotients(TTHQ) values of five heavy metal(Pb, Cd, As, Cr, and Hg)compound risks for 11 edible mushroom species were all less than 1. The T and Q values of heavy metals in dietary intake of edible mushrooms in adults were generally higher than those in children. The Q values of adult and child consumption of Agaricus blazei Murill were the highest, at 0.067 1 and 0.029 6, respectively. The risk of heavy metal ingestion through dietary routes was relatively low in 44 samples of 11 edible mushroom species sold in Guangxi, and the impact on human health was not significant.
