中文摘要: 通过测定羊肚菌水分、蛋白质、多糖、维生素B1、维生素B2、矿物质元素和氨基酸等指标含量,探究温室大棚栽培、林下仿野生栽培、洞穴栽培3种栽培方式对羊肚菌主要营养成分的影响。结果表明,3种栽培方式下的羊肚菌营养成分丰富,但在含量上存在差异,洞穴栽培方式的羊肚菌水分含量和多糖含量最高;温室大棚栽培方式的羊肚菌维生素B1、维生素B2、蛋白质含量最高;3种栽培方式下的羊肚菌都富含多种矿质元素,其中磷、铁、铜等矿质元素的营养质量指数(index of nutrition quality,INQ)较高,说明3种栽培方式下的羊肚菌都可以作为人类补充磷、铁、铜等矿质元素的首选食物;3种栽培方式下的羊肚菌富含18种氨基酸,其中包括8种人体必需氨基酸。标准模式谱、氨基酸比值系数、比值系数分评价发现,3种栽培方式下的羊肚菌都是品质较高的品种,都属于较优质蛋白,其中,标准模式谱评价下的温室大棚栽培方式羊肚菌较好;氨基酸比值系数和比值系数分评价下,洞穴栽培方式羊肚菌营养价值最高。
Abstract:By measuring the content of indicators such as water, protein, polysaccharides, vitamin B1, vitamin B2, mineral elements, and amino acids of Morchella esculenta, this study explored the effects of three cultivation methods: greenhouse, cave, and under-forest, on the main nutritional components of Morchella esculenta. The results showed that Morchella esculenta contained rich nutrients under three cultivation conditions,but the content varied. The content of water and polysaccharides in Morchella esculenta was the highest under cave cultivation; the content of protein, vitamin B1, and vitamin B2 in Morchella esculenta was the highest under greenhouse cultivation; under all three cultivation conditions, Morchella esculenta was rich in mineral elements, among which phosphorus, iron, and copper had a high index of nutrition quality (INQ), indicating that Morchella esculenta under three cultivation conditions could be used as preferred food for humans to supplement phosphorus, iron, and copper; Morchella esculenta grown under three cultivation conditions was rich in 18 amino acids, including eight essential amino acids for the human body. The evaluation of the amino acid pattern by Food and Agriculture Organization of the United Nations (FAO)/World Health Organization(WHO), the ratio of amino acid (RAA), the ratio coefficient of amino acid (RC), and the score of RC(SRC) showed that Morchella esculenta grown under three cultivation conditions was a high-quality variety and contained high-quality proteins. The evaluation of the FAO/WHO pattern showed that Morchella esculenta grown in greenhouses was superior to that under other cultivation conditions, and the evaluation of RAA, RC,and SRC showed that Morchella esculenta grown in caves had the highest nutritional value among the three cultivation methods.
