干燥加工技术在木槿花产品开发中的应用评价

中文摘要: 为解决木槿花因时令性问题导致的产品开发受限,以雅致木槿为材料,研究热风干燥和真空冷冻干燥对木槿花营养价值和储藏期的影响。营养价值结果表明:干燥样本与新鲜样本相比,除粗灰分、可溶性糖、铁、脯氨酸含量,其他营养成分含量在干燥后均下降,热风干燥和真空冷冻干燥样本的综合评分分别下降22.78%和20.13%;储藏稳定性研究表明:无论是从营养价值还是膳食风险角度,干燥后的木槿花比新鲜木槿花更具优势,新鲜木槿花在室温和冷藏条件下储藏期仅为3 d和7 d,在冷冻条件下可达90 d,而干燥后木槿花在3种储藏条件下,其储藏期均可超过90 d。综上,干燥技术可用于木槿花产品开发,干燥后的木槿花对储藏温度及环境要求低;两种不同的干燥技术相比,真空冷冻干燥样本的理化性质和营养价值虽优于热风干燥样本,但综合考虑成本因素,热风干燥为木槿花干燥加工的首选技术。
Abstract:The product development using hibiscus flowers was limited by seasonal constraints. In view of this problem, the effects of hot air drying and vacuum freeze drying on the nutritional value and storage stability of the flowers of Hibiscus syriacus f. elegantissimus were investigated. The results showed that the content of other basic nutrients except crude ash, soluble sugar, iron, and proline declined after drying. The comprehensive scores of the nutritional quality of hot air drying and vacuum freeze drying samples decreased by 22.78% and 20.13%, respectively, compared with that of fresh samples. The storage experiment indicated that dried samples were superior to fresh samples in terms of the nutritional quality and dietary safety. The storage periods of fresh samples were only 3 days and 7 days under refrigeration, while frozen storage extended the storage period to 90 days. Dried hibiscus flowers maintained stability for over 90 days under all three storage conditions. In summary, drying was applicable for hibiscus product development, with the processed flowers demonstrating significantly reduced requirements for storage temperature and environmental conditions. Although vacuum freeze drying was superior to hot air drying in the matter of physicochemical properties and nutritional quality, it deemed that hot air drying was the preferred technology for drying hibiscus flowers in consideration of costs.
