中文摘要: 为开发一种使用益生菌发酵的五味子果汁,该研究探讨pH值、发酵温度、发酵时间、搅拌速度、乳酸菌稀释比例及接种量对产品中功效成分含量的影响,建立并优化发酵工艺。通过体外试验评估发酵液在改善血糖水平方面的开发潜力。结果表明,乳酸菌发酵五味子果汁最佳生产工艺条件为发酵温度42 ℃、pH5.0、接种量0.4%(质量分数)、搅拌速度90 r/min、果汁稀释体积比1∶3,发酵时间18 h。该条件下所得乳酸菌发酵五味子果汁多糖含量为1.612 g/L,同时具有一定的降血糖作用。
Abstract:A Schisandra chinensis fruit juice product was developed by fermentation with probiotics. The effects of fermentation conditions (pH value, fermentation temperature, fermentation time, stirring speed, dilution ratio of lactic acid bacteria, and inoculation mass fraction) on the content of functional components in the product were explored, on the basis of which the fermentation process was established and optimized. The development potential of the fermented fruit juice in regulating blood glucose levels was evaluated through in vitro experiments. The experimental results showed that the optimal production process for the S. chinensis fruit juice fermented by lactic acid bacteria was as follows: fermentation temperature of 42 ℃, pH5.0, inoculation mass fraction of 0.4%, stirring speed of 90 r/min, dilution ratio of 1∶3, and fermentation time of 18 h. The polysaccharide content in the fermented fruit juice obtained by this process was 1.612 g/L. Moreover, the fermented fruit juice exhibited certain blood glucose-lowering effect.
