中文摘要: 为研究不同发酵工艺条件对发酵藏羊肉肠pH值、色差和感官评分的影响,以藏绵羊肉为试验材料,添加乳酸菌发酵剂(植物乳植杆菌HH-LP56∶嗜热链球菌HH-ST08=1∶1,质量比)制成肉肠,以pH值、色差和感官评分为评价指标,进行单因素和响应面试验设计,探究菌株接种量、发酵时间和发酵温度对发酵羊肉肠品质特性的影响,并确定最佳的发酵工艺条件。结果表明,最佳工艺条件为发酵温度33.0 ℃、发酵时间35.5 h、菌株接种量108 CFU/g,此时发酵羊肉肠的感官评分较高(75.50),整体接受度较高,产品风味较好且优化结果准确可靠,有助于发酵羊肉肠加工工艺的研究和品质提升。
Abstract:To investigate the effects of different fermentation conditions on pH value, color difference, and sensory score of fermented Tibetan mutton sausage, Tibetan sheep meat was used as experimental material,and a lactic acid bacteria starter culture(Lactobacillus plantarum HH-LP56∶Streptococcus thermophilus HHST08 = 1∶1, mass ratio) was added. Single-factor and response surface experimental designs were carried out using pH value, color difference value, and sensory score as evaluation indices to explore the effects of strain inoculum size, fermentation time, and fermentation temperature on the quality characteristics of fermented mutton sausage and determine the optimal process conditions. The results indicated that the optimal process conditions were a fermentation temperature of 33.0 ℃, a fermentation time of 35.5 h, and a strain inoculum size of 108 CFU/g. Under these conditions, the fermented mutton sausage achieved the relatively high sensory score (75.50), with high overall acceptance, favorable product flavor, and reliable optimization results, which contribute to research on the processing technology and quality improvement of fermented mutton sausage.
