中文摘要: 以茶多酚作阳性对照,DPPH自由基清除率、ABTS+自由基清除率、羟自由基清除率、超氧阴离子自由基清除率、铁还原能力为指标,探究淮山淀粉-茶多酚复合物(Chinese yam starch-tea polyphenol complexes,CYS-TPC)的抗氧化特性。结果表明,CYS-TPC具有良好的抗氧化活性,且其抗氧化活性与所含CYS-TPC的质量浓度呈现剂量-效应关系,相关系数R>0.943 8。其中,当CYS-TPC质量浓度为4.2 mg/mL时,其对ABTS+自由基清除率达到(99.17±0.32)%,对羟自由基清除率达到(87.88±0.80)%,对超氧阴离子自由基清除率达到(88.83±1.04)%,铁还原能力为1.255±0.002;当CYS-TPC质量浓度达到3.4 mg/mL时,其对DPPH自由基的清除率达到(85.53±1.00)%。
Abstract:With tea polyphenols as the positive control, the antioxidant properties of the Chinese yam starchtea polyphenol complexes (CYS-TPC) were investigated based on DPPH, ABTS+, hydroxyl, and superoxide anion free radical scavenging rates and ferric-reducing antioxidant power (FRAP). The results showed that CYS-TPC demonstrated good antioxidant activity, which was in a dose(mass concentration)-effect relationship (R>0.943 8). CYS-TPC at the mass concentration of 4.2 mg/mL showed the ABTS+ free radical scavenging rate of (99.17±0.32)%, the hydroxyl free radical scavenging rate of (87.88±0.80)%, the superoxide anion free radical scavenging rate of(88.83±1.04)%, and the FRAP of 1.255±0.002. The CYS-TPC at 3.4 mg/mL showcased the DPPH free radical scavenging rate of (85.53±1.00)%.
