中文摘要: 以赤霞珠葡萄为原料酿造葡萄酒,对野生酵母与商业酵母所酿葡萄酒中糖类、醇类、酸类、二氧化硫等理化指标进行分析。结果表明:3种商业酵母与野生酵母相比,具有较强的糖转化能力和较快的苹果酸转换能力,酒精产率高,所酿葡萄酒的甘油含量较高、二氧化硫含量较低、挥发性酸含量较低等。因此不同的酵母菌对葡萄酒酿造过程中品质指标具有不同的作用和影响。
Abstract:With Cabernet Sauvignon wine as the research object, the physical and chemical indicators such as sugar, alcohol, acid, and sulfur dioxide in the wine made by wild and commercial yeasts were analyzed. The results showed that compared with wild yeasts, the three commercial yeasts had a stronger sugar conversion ability and a faster malic acid conversion ability, as well as a higher alcohol yield. The wine made by commercial yeasts contained higher glycerol content, lower sulfur dioxide content, and lower volatile acid content.Therefore, different yeasts have different effects and influences on the quality indicators during wine brewing.
