中文摘要: 电磁场果蔬保鲜技术可提升果蔬的保鲜性能,有效延长货架期并保持较好的品质特性,已成为果蔬保鲜领域的研究热点。该文综述电场、磁场技术在果蔬保鲜领域中的原理、分类、应用等,重点从酶活性改变、跨膜电位运输及冰晶形成等角度综述其保鲜机理;同时从降低呼吸强度、减少营养损失、抑制微生物增长等方面探讨其应用效果,并展望该技术面临的问题与挑战,旨在为果蔬保鲜技术领域的发展与创新提供参考。

Abstract:Electrical and magnetic fields can enhance the preservation performance for fruits and vegetables,effectively extending the shelf life and maintaining the quality. Accordingly,this technology has become a research hotspot in the field of fruit and vegetable preservation. The principles,classification,and application of electric and magnetic fields in fruit and vegetable preservation were reviewed. Particularly,the preservation mechanisms were introduced from the perspectives of changing enzyme activity,transmembrane potential and transport,and ice crystal formation. The application effects were expounded from the perspectives of weakening respiration,reducing nutrient losses,and inhibiting microbial growth. Finally,the problems and challenges faced by this technology were discussed. The review aimed to provide reference for the development and innovation in the field of fruit and vegetable preservation technology.
