中文摘要: 为优化双频超声波辅助提取潼川豆豉抗氧化肽的工艺条件,该研究在单因素试验的基础上,通过Plackett-Burman试验筛选得到pH值、料液比和超声功率密度3个影响显著因素,然后进行Box-Behnken试验,确定最佳工艺条件为pH7.9、料液比1∶37(g/mL)、超声功率密度297 W/L、超声时间30 min、25 kHz与40 kHz超声工作时间比30∶20(s/s)和超声温度40 ℃,在该工艺条件下,抗氧化肽提取率为(39.05±0.18)%、DPPH自由基清除率为(93.99±0.26)%,与对照相组比,分别提高了43.98%和22.34%。

Abstract:The response surface methodology was employed on the basis of single-factor test and the Plackett-Burman design to optimize dual-frequency ultrasound-assisted extraction of antioxidant peptides from Tongchuan Douchi in the present study. Three significant factors were screened according to the results of Plackett-Burman design,which were pH,material-to-liquid ratio,and ultrasound power density. The optimum process conditions were obtained by Box-Behnken design:pH 7.9,material-to-liquid ratio of 1∶37(g/mL),working time ratio of 25 kHz to 40 kHz to be 30∶20 (s/s),ultrasonic temperature of 40 ℃,ultrasound power density of 297 W/L,and ultrasonic time of 30 min. Under these conditions,the extraction rate of antioxidant peptides was(39.05±0.18)%,and the DPPH free radical scavenging rate was (93.99±0.26)%,which were 43.98% and 22.34% higher than those of the control,respectively.
