不同地区芋头营养成分与抗氧化性

中文摘要: 为探究不同地区芋头营养成分和抗氧化性,对比不同种类芋头间的差异,评估荔浦芋营养特性,以荔浦芋、广西芋、广东芋、山东芋、福建芋、奉化芋和金华芋7种芋头为研究对象,对芋头中营养成分、矿物元素和维生素含量进行测定,并分析其多酚含量和抗氧化性之间的关系。结果 表明,不同地区芋头营养成分和多酚抗氧化性差异较大,荔浦芋镁、维生素C和多酚含量较高,镁元素含量为(1 489±36) mg/kg,维生素C含量为(12.60±0.10) mg/100 g,多酚含量为93.4 mg/100 g。抗氧化性研究结果显示,荔浦芋多酚1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基清除率为55.2%,2,2-联氮-二(3-乙基-苯并噻唑-6-磺酸)-二铵盐[2,2-benzazobis(3-ethylbenzothiazole-6-sulfonic acid)-diammonium salt,ABTS]阳离子自由基清除率为52.4%。相比其他地区芋头,荔浦芋具有高维生素C、高多酚含量的特点,其多酚抗氧化性处于较高水平。

Abstract:In order to investigate the nutritional components and antioxidant activity of taro from different regions,compare differences among taro varieties,and evaluate the nutritional characteristics of Lipu taro,seven types of taro,including Lipu taro,Guangxi taro,Guangdong taro,Shandong taro,Fujian taro,Fenghua taro,and Jinhua taro,were studied. The nutritional components,mineral elements,and vitamin contents in taro were determined,and the relationship between polyphenol content and antioxidant activity was analyzed. The results showed that significant differences existed in nutritional components and polyphenols′ antioxidant activity among taro from different regions. Lipu taro had relatively high contents of magnesium,vitamin C,and polyphenols. The magnesium,vitamin C,and polyphenol contents were (1 489±36) mg/kg,(12.60±0.10) mg/100 g,and 93.4 mg/100 g,respectively. The antioxidant activity results showed that the 1,1-diphenyl-2-picrylhydrazyl (DPPH) free radical scavenging rate of polyphenols in Lipu taro was 55.2%,and the 2,2-benzazobis (3-ethyl-benzothiazole-6-sulfonic acid) diammonium salt (ABTS) cationic free radical scavenging rate was 52.4%. Compared with taro from other regions,Lipu taro exhibited higher vitamin C and polyphenol contents,and its polyphenol antioxidant activity was at a relatively high level.
