中文摘要: 为研究不同干燥方式对黄芪品质的影响,以新鲜黄芪为原料,研究热风干燥、热泵干燥、中短波红外干燥、红外联合热泵干燥、真空冷冻干燥和真空脉动干燥对黄芪感官品质(色泽、复水比)、食用品质(风味、硬度)、功效品质(黄芪甲苷含量、毛蕊异黄酮葡萄糖苷含量、黄芪多糖含量)的影响,并采用主成分分析确定其最佳干燥方式。结果 表明:热泵干燥黄芪色差值最小(76.83)、黄芪多糖含量最高(14.2%);真空冷冻干燥复水比最大(3.06%),与其他组差异显著(P<0.05);红外联合热泵干燥黄芪硬度最大(3.11 N)、黄芪毛蕊异黄酮葡萄糖苷含量最高(0.110%),均与其他组差异显著(P<0.05);真空冷冻干燥黄芪甲苷含量最高(1.11%)。干燥黄芪综合得分由高到低排序为真空冷冻干燥>红外联合热泵干燥>中短波红外干燥>热风干燥>真空脉动干燥>热泵干燥。综上,红外联合热泵干燥是较为合适的黄芪干燥方式。
Abstract:To investigate the effects of different drying methods on the quality of Astragalus membranaceus,fresh Astragalus membranaceus was used as raw material. The effects of hot air drying,heat pump drying,medium-short wave infrared drying,infrared combined heat pump drying,vacuum freeze-drying,and vacuum pulse drying on the sensory quality(color and rehydration ratio),edible quality(flavour and hardness),and functional quality (astragaloside IV content,calycosin glucoside content,and polysaccharide content) of Astragalus membranaceus were evaluated. Principal component analysis was used to determine the optimal drying method. The results showed that Astragalus membranaceus dried by heat pump had the lowest color difference value(ΔE=76.83) and the highest polysaccharide content (14.2%);the rehydration ratio of vacuum freezedried samples was the highest(3.06%),with significant difference compared to other groups (P<0.05). The samples dried by infrared combined heat pump had the highest hardness (3.11 N) and the highest calycosin glucoside content (0.110%),both significantly different from other groups (P<0.05). The astragaloside IV content was the highest (1.11%) in the vacuum freeze-dried sample. The comprehensive score of the dried Astragalus membranaceus samples ranked from high to low as follows:vacuum freeze-drying>infrared combined heat pump drying>medium-short wave infrared combined hot air drying>hot air drying>vacuum pulse drying>heat pump drying. In conclusion,infrared combined heat pump drying was a more suitable method for processing Astragalus membranaceus.
