中文摘要: 为研究香菇柄添加到鸡饲料中对海兰褐鸡鸡胸肉品质的影响,选取112只40周龄海兰褐鸡,分别饲喂添加0%、5%、10%、15%香菇柄粉的日粮,饲喂40周后宰杀,测定鸡胸肉的基础营养成分、保水性、质构特性和基础理化指标。结果 表明,饲喂香菇柄可明显增加海兰褐鸡鸡胸肉的灰分含量;减少滴水损失;增加熟制鸡胸肉的硬度、咀嚼性、胶着性;显著降低与肉变质程度正相关的pH值、挥发性盐基氮(total volatile basic nitrogen,TVB-N)含量、硫代巴比妥酸反应物(thiobarbituric acid reactive substances,TBARS)值。采用主成分分析(principal component analysis,PCA)和正交偏最小二乘法-判别分析(orthogonal partial least squares-discriminant analysis,OPLS-DA)对以上显著指标的原始数据进行可视化处理,结果显示硬度和胶着性是不同香菇柄添加比例的鸡胸肉样品间的差异指标,说明10%~15%的香菇柄添加比例改变鸡胸肉相关质构特性的效果最明显。主成分分析结果显示,15%香菇柄添加比例在提升蛋鸡鸡胸肉综合品质方面具有明显优势。
Abstract:The effect of adding shiitake mushroom stalk to diet on the quality of breast meat from Hyline brown hens was studied. A total of 112 forty-week-old Hyline brown hens were fed the diets supplemented with 0%,5%,10%,and 15% shiitake mushroom stalk powder and slaughtered after feeding for 40 weeks. The basic nutrients,water retention,texture properties,and basic physicochemical parameters of breast meat were determined. The results showed that feeding shiitake mushroom stalk significantly increased the ash content and reduced the drip loss of breast meat from Hyline brown hens. In addition,it increased the hardness,chewability,and stickiness of cooked breast meat. The pH value,total volatile basic nitrogen (TVB-N),and thiobarbituric acid reactive substances (TBARS),which were positively correlated with the degree of meat spoilage,decreased significantly. The original data of these significant indexes were visualized by principal component analysis(PCA) and orthogonal partial least squares-discriminant analysis. The results showed that hardness and stickiness were the differential indexes among the samples of breast meat with different proportions of shiitake mushroom stalk addition,and 10%-15% of shiitake mushroom stalk addition had the most obvious effect of improving the texture properties of breast meat. The PCA results showed that 15% of shiitake mushroom stalk addition had obvious advantages in improving the comprehensive quality of breast meat from Hyline brown hens.
