中文摘要: 为开发石斛功能性面包,该试验通过在小麦粉中添加铁皮石斛粉,研究其对淀粉糊化特性、面筋形成、面团流变学特性以及面包烘焙品质的影响。结果 表明,随着铁皮石斛粉添加量的增加,混合粉的持水力上升,淀粉糊化的峰值黏度和回生值降低,面团中二硫键含量和面筋得率下降,面包比容呈先增大后减小的趋势。添加铁皮石斛粉会使面团弹性模量和黏性模量增大,面团延展性降低,影响面包的烘焙品质。过多的铁皮石斛粉会破坏面筋蛋白均匀致密的微观结构,使面包的硬度和咀嚼性增大,适口性降低。综上,铁皮石斛粉对面团特性和面包烘焙品质产生影响,在小麦粉中添加4%~6%的铁皮石斛粉,可制备出感官品质可接受且富含生物活性成分的功能性面包。
Abstract:The effects of Dendrobium officinale powder added at different levels in wheat flour on the gelatinization of starch,formation of gluten,rheological properties of dough,and baking performance of bread were investigated,with the aim of developing functional bread with D. officinale. The results indicated that with increase in addition of D. officinale powder,the water holding capacity of mixed flour increased significantly,and the peak viscosity and retrogradation value of starch decreased during starch gelatinization process. The content of disulfide bonds in dough and the yield of gluten decreased after the addition of D. officinale powder in wheat flour,and the specific volume of bread showed a trend of first increasing and then decreasing. Both the elastic modulus and viscous modulus of dough increased,while the extensibility of dough decreased after the addition.The baking performance of bread was affected by D. officinale powder. The compact and uniform microstructure of gluten was destroyed by over addition of D. officinale powder in dough,which increased the hardness and chewiness and decreased the palatability of bread. In a word,D. officinale powder changed the properties of dough and the baking performance of bread. The functional bread with acceptable sensory quality and rich in bioactive ingredients was produced by addition of 4%-6% D. officinale powder in wheat flour.
