中文摘要: 该研究旨在开发一种融入黄精多糖(Polygonatum sibiricum polysaccharide,PSP)的活性包装膜,并探究其在草莓保鲜应用中的实际效能。采用溶液浇铸法,以魔芋葡甘聚糖(konjac glucomannan,KGM)与聚乙烯醇(polyvinyl alcohol,PVA)为主要成膜材料,柠檬酸(citric acid,CA)为交联剂,PSP为活性剂,制备出具有抗菌、抗氧化性能的KGM/PVA/CA/PSP活性包装膜,对草莓进行包装,并设置空白组、对照组[以聚乙烯(polyethylene,PE)保鲜膜包装草莓]。通过对比各组草莓的外观、硬度等一系列指标,综合评估其保鲜效果。结果 表明:与空白组和对照组相比,经活性包装膜包装的草莓,在第10天时仍能保持鲜艳的色泽和较好的品质;其硬度下降幅度最小,保持在更高的水平(1.05 N/cm2);腐烂率和失重率均为最低,分别为16.53% 和10.33%。此外,该活性包装膜还能有效延缓草莓中可溶性固形物含量达到峰值的时间,并减缓维生素C含量的下降速率。综上,该活性包装膜在草莓保鲜方面表现出良好的性能,能够延长草莓保质期。
Abstract:This study aimed to develop an active packaging film incorporating Polygonatum sibiricum polysaccharide (PSP) and investigate its practical efficacy in strawberry preservation. A solution casting method was employed,using konjac glucomannan (KGM) and polyvinyl alcohol (PVA) serving as the primary filmforming materials,citric acid (CA) as the crosslinking agent,and PSP as the active component. KGM/PVA/CA/PSP active packaging films with antibacterial and antioxidant properties were successfully prepared and applied for strawberry packaging. A blank group and a control group(strawberries packaged with commercially available PE cling film) were established. The preservation effects were comprehensively evaluated by comparing various indicators,including the appearance and firmness of strawberries across different groups. The results indicated that compared with the blank and control groups,strawberries packaged with the active packaging film retained vibrant color and better overall quality on day 10. The decline in firmness was the smallest,maintaining a relatively high level of 1.05 N/cm2. Both the decay rate and weight loss rate were minimized,reaching 16.53% and 10.33%,respectively. Furthermore,the active packaging film effectively delayed the peak time of soluble solid content and slowed the rate of vitamin C degradation in strawberries. In conclusion,the KGM/PVA/CA/PSP active packaging film demonstrated excellent preservation performance for strawberries and effectively extended their shelf life.
