中文摘要: 该研究基于传统豆腐工艺,以大豆分离蛋白(soy protein isolate,SPI)和茶氨酸为主要原料,制备茶氨酸-SPI基复合豆腐。采用质构分析仪、低场核磁成像分析仪、扫描电子显微镜等仪器,分析茶氨酸-SPI基复合豆腐的质构特性、水分分布、蒸煮损失率、溶胀率及微观结构,并结合茶叶风味物质(香叶醇、芳樟醇和苯甲酸)的缓释行为评价其应用潜力。结果 表明,与纯SPI豆腐相比,0.10%茶氨酸-SPI基复合豆腐对香叶醇、芳樟醇和苯甲酸的释放速率更低;0.10%的茶氨酸可有效改善SPI基复合豆腐的质构特性,显著提升其弹性、咀嚼性和溶胀率(p<0.05)、改善凝胶网络结构、显著降低蒸煮损失率(p<0.05),且水分分布更加均匀。因此茶氨酸作为品质改良剂可有效改善SPI基复合豆腐的整体品质。
Abstract:With soy protein isolate (SPI) and theanine as the main raw materials,the theanine-SPI-based composite tofu was prepared by the traditional salt brine tofu processing procedure. The texture characteristics,moisture distribution,cooking loss,swelling rate,and microstructure of the composite tofu were analyzed by a texture analyzer,a low-field nuclear magnetic resonance imaging analyzer,and a scanning electron microscope.The application potential of the composite tofu was evaluated based on the slow-release behavior of tea flavor substances (geraniol,linalool,and benzoic acid). The results showed that compared with the pure SPI-based tofu,the 0.10% theanine-SPI-based composite tofu showed reduced release rates of geraniol,linalool,and benzoic acid. Theanine (0.10%) improved the texture properties of SPI-based tofu,enhancing the elasticity,chewiness,and swelling rate (p<0.05). Furthermore,it improved the gel network structure,reduced the cooking loss(p<0.05),and made the moisture distribution more uniform. Theanine,as a quality improver,effectively improved the overall quality of SPI-based tofu.
