中文摘要: 为丰富天然多糖基质在乳液凝胶珠中的应用,利用羧甲基壳聚糖作为乳化剂,并通过Ca2+交联形成乳液凝胶珠,探究不同羧甲基壳聚糖质量浓度和油相体积分数对乳液及乳液凝胶珠结构与理化性质的影响。结果 表明,随着油相体积分数增加,乳液凝胶珠网络结构由紧密变得疏松,进而影响乳液凝胶珠的持水能力与力学性能:油相体积分数为5%的乳液凝胶珠持水能力最高,达64.35%,硬度(2 350.80 gf)和弹性(0.85)也最大,而油相体积分数为30%时,乳液凝胶珠的胶着性、咀嚼性与内聚性最佳,分别为1 517.44、1 258.27、0.65。
Abstract:With the aim of enhancing the application of natural polysaccharide matrices in emulsion gel beads,emulsion gel beads were formed with carboxymethyl chitosan as an emulsifier through Ca2+ crosslinking. The influences of different carboxymethyl chitosan mass concentrations and oil phase volume fractions on the structures and physicochemical properties of emulsions and emulsion gel beads were investigated. The results indicated that as the oil phase volume fraction increased,the network structure of emulsion gel beads became less compact,which consequently affected the water retention and mechanical properties of the beads. The beads with an oil phase volume fraction of 5% exhibited the highest water retention capacity reaching up to 64.35%,as well as the greatest hardness( 2 350.80 gf) and elasticity( 0.85). The best adhesiveness,chewiness,and cohesiveness of the gel beads were 1 517.44,1 258.27,and 0.65,respectively,at 30% volume fraction of the oil phase.
