中文摘要: 细菌在奶豆腐发酵过程中决定产品的质构和风味,为研究内蒙古不同地区奶豆腐的细菌多样性,采用Illumina MiSeq高通量测序技术对内蒙古东部、中部和西部3个地区的奶豆腐样品的细菌多样性进行解析,并进行代谢组和微生物学组联合分析。结果表明,奶豆腐样品间的细菌多样性和丰富度存在明显差异,共有优势菌门为厚壁菌门(Firmicutes),而变形菌门(Proteobacteria)、拟杆菌门(Bacteroidetes)和放线菌门(Actinobacteria)不同地区差异较大。优势菌属为乳球菌属(Lactococcus)、乳杆菌属(Lactobacillus)、肠杆菌属(Enterobacter)、链球菌属(Streptococcus)、嗜柠檬酸明串球菌属(Leuconostoc)。不同奶豆腐样品特异性非发酵剂微生物各不相同。不同地区间的奶豆腐样品的代谢组学差异元素和微生物组学差异元素均不相同,显著差异菌种有5个,代谢组学中部和东部差异最大。
Abstract:During the fermentation process,bacteria determined the texture and flavor of dairy tofu.Illumina MiSeq high-throughput sequencing was employed to analyze the bacterial diversity of dairy tofu samples from eastern,central,and western Inner Mongolia,and then the combined analysis of metabolomics and microbiomics was performed.The results showed that there were significant differences in bacterial diversity and richness among samples.The common dominant bacterial phylum was Firmicutes,whereas Proteobacteria,Bacteroidetes,and Actinobacteria showed significant differences among different samples.The dominant genera were Lactococcus,Lactobacillus,Enterobacter,Streptococcus,and Leuconostoc.The specific non-fermentative microorganisms varied among different dairy tofu samples.Both metabolomics and microbiomics revealed differences between dairy tofu samples from different regions.There were 5 significantly differential species,and metabolomics showcased the largest difference between samples from the central and eastern regions.
