中文摘要: 该研究从酸菜发酵食品中分离鉴定出一株辣椒赖氨酸芽孢杆菌Lysinibacillus capsici GXUN74704,将其人工接种至芥菜发酵体系,研究发现,亚硝酸盐的含量始终不超过25 mg/kg,在发酵过程中可以抑制高“亚硝峰”的形成,提高芥菜发酵食品的安全性;发酵5 d后,人工接种GXUN74704的芥菜发酵体系中葡萄糖含量接近0.1 g/L,加速利用葡萄糖、缩短发酵周期,且不影响芥菜发酵体系中益生成分的含量。高通量测序结果发现,人工接种菌株Lysinibacillus capsici GXUN74704发酵芥菜体系微生物物种丰富度与多样性高于自然发酵芥菜体系。辣椒赖氨酸芽孢杆菌Lysinibacillus capsici GXUN74704在芥菜发酵中具有潜在的应用和开发价值,可以提高芥菜发酵食品的安全性。
Abstract:Lysinibacillus capsici GXUN74704 was isolated and identified from pickled Chinese cabbage products and artificially inoculated into the leaf mustard fermentation system.It was found that the content of nitrite was always less than 25 mg/kg.The strain inhibited the formation of high nitrite peaks during the fermentation process,improving the safety of fermented leaf mustard products.After 5 days of fermentation,the glucose content in the fermentation system inoculated with L.capsici GXUN74704 was close to 0.1 g/L,which indicated that the strain accelerated the utilization of glucose and shortened the fermentation period without affecting the content of probiotics in the fermentation system.The results of high-throughput sequencing showed that species richness and diversity in the leaf mustard fermentation system inoculated with L.capsici GXUN74704 were higher than those in the natural fermentation system.L.capsici GXUN74704 had potential applications and a development value in leaf mustard fermentation,improving the safety of fermented leaf mustard products.
