中文摘要: 研究舞钢绿茶关键挥发性成分和不同采摘时期鲜叶制作的舞钢绿茶挥发性成分的差异。通过顶空固相微萃取-气相色谱-质谱联用(headspace solid-phase microextraction-gas chromatography-mass spectrometry,HS-SPME-GCMS)技术对河南省舞钢市地区种植的‘白叶一号’茶树品种制作而成的绿茶进行香气成分分析。研究结果显示,在茶叶样品中共检测出98种挥发性成分,并通过多元统计分析筛选出14种存在显著差异的化合物。进一步计算这些差异化合物的香气活度值(odor activity value,OAV),最终确定顺式-3-己烯基己酸酯、水杨酸甲酯等10种对舞钢绿茶香气贡献显著的特征香气成分。综上,不同采摘时期舞钢绿茶香气品质存在差异,其中芳樟醇、茉莉酮和吲哚在清明前采摘样品中含量相对较高,随着采摘时期的推迟而下降;谷雨前采摘的样品中水杨酸甲酯、香叶醇等挥发性成分含量显著高于其他时期。

Abstract:To study the differences between the key volatile components of Wugang green tea and the volatile components of Wugang green tea made from fresh leaves at different picking periods.The aroma composition of green tea made from 'Baiye No.1' tea cultivar cultivated in Wugang City,Henan Province was analyzed by headspace solid-phase microextraction-gas chromatography-mass spectrometry(HS-SPME-GC-MS)technology.The results showed that a total of 98 volatile components were detected in the tea samples,and 14 compounds with significant differences were screened out by multivariate statistical analysis.The odor activity value(OAV)of these differential compounds was further calculated,and finally 10 characteristic aroma components such as cis-3-hexenyl hexanoate and methyl salicylate were determined to contribute significantly to the aroma of Wugang green tea.In conclusion,there were differences in the aroma quality of Wugang green tea in different picking periods,among which linalool,jasmonone and indole were the highest in the samples picked before Qingming,and decreased with the postponement of the picking period.The contents of volatile components such as methyl salicylate and geraniol in the samples collected before the grain rain were significantly higher than those in other periods.
