中文摘要: 为开发低血糖生成指数(glycemic index,GI)的燕麦产品,以燕麦为主要原料,对其进行脱脂、熟化、超微粉碎等工艺处理得到燕麦膳食纤维粉。以脂肪残留率为评价指标,通过单因素试验和正交试验优化燕麦膳食纤维粉的最佳脱脂工艺条件,并研究脱脂工艺对燕麦膳食纤维粉的色泽、粒度和体外消化性的影响,测定脱脂燕麦膳食纤维粉GI值。结果表明,燕麦膳食纤维粉用正丁烷进行脂肪脱除的最优工艺条件如下:萃取次数为5次、萃取时间为40 min、料液比为1∶1.0(g/mL),此时燕麦膳食纤维粉的脂肪残留率为0.20%。经过脱脂工艺处理,燕麦膳食纤维粉的脂肪含量降低97%,L*值、a*值降低,b*值增加,粒径向较小范围移动,中位直径(D0.5)由69.91 μm降低至32.12 μm,体外消化水解率由56.64%下降至40.33%。食物GI值测试结果表明,脱脂燕麦膳食纤维粉的GI值为36,属于低GI食物。综上,经过脱脂工艺处理可制备一款低GI的燕麦膳食纤维粉,可为患糖尿病、肥胖等慢性病人群提供更多的膳食选择。
Abstract:To develop an oat product with a low glycemic index(GI),oat dietary fiber powder was prepared using oats as the main raw material through processes including defatting,maturing,and ultrafine grinding.With fat residue rate as the evaluation index,the optimal defatting process conditions of the oat dietary fiber powder were determined by single-factor experiments and orthogonal experimental design.The effect of the defatting process on the color,particle size,and in vitro digestibility of the oat dietary fiber powder was investigated,and the GI value of the defatted oat dietary fiber powder was determined.The results showed that the optimal process conditions for fat removal from oat dietary fiber powder using n-butane were five extraction times,40 minutes of extraction,and a material-to-liquid ratio of 1∶1.0(g/mL).Under these conditions,the fat residue rate of the oat dietary fiber powder was 0.20%.After the defatting process,the fat content of the oat dietary fiber powder decreased by 97%.The L* and a* values decreased,while the b* value increased.The particle size shifted toward a smaller range,and the median diameter(D0.5)decreased from 69.91 μm to 32.12 μm.The in vitro hydrolysis rate decreased from 56.64% to 40.33%.The GI test results showed that the GI value of the defatted oat dietary fiber powder was 36,indicating that it is a low-GI food.In conclusion,oat dietary fiber powder with low GI can be prepared through a defatting process,which can provide more dietary choices for people with chronic diseases such as diabetes and obesity.
