中文摘要: 为探究不同浓度钒处理对发芽黑豆中酚类物质含量及其抗氧化活性的影响,通过水培的方法研究钒处理对发芽黑豆中总酚、总黄酮含量的变化、抗氧化活性以及发芽黑豆抗氧化酶活性。结果表明:在50 mg/L钒处理时发芽率最高,为(77.33±2.49)%,芽长为(10.12±0.23)cm;随钒浓度的增加,总酚、总黄酮含量整体表现为先升高后降低;当钒浓度为50、100 mg/L时,与对照组相比发芽黑豆总酚含量显著增加(p<0.05),50 mg/L时总黄酮含量最高,随后呈下降趋势。同时,发芽黑豆抗氧化活性有一定增强,趋势与总酚、总黄酮含量变化基本一致,抗氧化酶活性也有一定提升。
Abstract:In order to explore the effects of different concentrations of vanadium on the content of phenolic compounds and antioxidant activity in germinated black beans,the changes of total phenols and flavonoids in germinated black beans treated with vanadium were studied by hydroponics,as well as the antioxidant activity and antioxidant enzyme activity of germinated black beans.The results showed that the highest germination rate was(77.33±2.49)%,and the bud length was(10.12±0.23)cm when the vanadium concentration was 50 mg/L.With the increase in vanadium concentration,the content of total phenols and flavonoids increased first and then decreased.When the vanadium concentration was 50 mg/L and 100 mg/L,the total phenol content of germinated black beans significantly increased compared to the control group(p<0.05),and the total flavonoid content reached the highest value of 50 mg/L and then showed a downward trend.At the same time,the antioxidant activity of germinated black beans increased to some extent,and the trend was basically consistent with the changes of total phenol and flavonoid content;the antioxidant enzyme activity also increased to some extent.
