中文摘要: 为探究干制方式对金枪鱼低聚肽粉末品质的影响,以喷雾干燥肽粉和冷冻干燥肽粉为原料,对其结构、组分和生物活性进行评估。结果表明,金枪鱼低聚肽的分子量几乎全部低于500 Da,其中冷冻干燥组的分子量更小,特征紫外吸收峰更强,总氨基酸含量更高且部分功能性氨基酸留存更多,特别是疏水性氨基酸比喷雾干燥肽粉高出16%,在生物活性方面,冷冻干燥肽粉也展现出更突出的抗氧化、抗糖基化、保湿和酪氨酸酶活性抑制作用。这说明干制方式会影响金枪鱼低聚肽的品质,而冷冻干燥更适合金枪鱼低聚肽的生产加工。
Abstract:To explore the influence of drying methods on the quality of tuna oligopeptide powder,the structure,composition,and biological activity of spray-dried peptide powder and freeze-dried peptide powder were evaluated.The results showed that the molecular weight of tuna oligopeptides was almost entirely below 500 Da,with the freeze-dried sample exhibiting a lower molecular weight,stronger characteristic ultraviolet absorption peaks,higher total amino acid content,and greater retention of certain functional amino acids.Notably,the content of hydrophobic amino acids in the freeze-dried peptide powder was 16% higher than that in the spraydried counterpart.In terms of biological activity,the freeze-dried peptide powder also showed more pronounced antioxidant,anti-glycation,moisturizing,and tyrosinase inhibitory effects,indicating that the drying method affected the quality of tuna oligopeptides,with freeze-drying being more suitable for their production and processing.
