中文摘要: 聚对苯二甲酸乙二醇酯(polyethylene terephthalate,PET)是一种热塑性聚酯材料。PET瓶是乳制品常用的包装形式,通过在PET原料中混入功能性树脂材料,改变包装的阻隔性能可为乳制品提供高保护的存储条件。该研究比较3种PET瓶(普通的PET透明瓶、结合2%活性氧的PET透明瓶、添加8%~12%阻光树脂的PET非透明瓶)防止巴氏杀菌乳发生光氧化的能力,模拟零售和超市陈列条件,贮存31 d,评价贮存期内溶解氧、核黄素、风味化合物组成的变化,测定包装材料的阻光、阻氧特性,通过感官评价进行关联性分析。结果表明,适当的光屏障可以避免巴氏杀菌乳在长时间贮存期间因光照而氧化产生异常风味;2%氧气屏障并未提供明显的风味保护;普通的PET透明瓶和结合2%活性氧的PET透明瓶巴氏杀菌乳整个贮存期核黄素、含氧量呈降低趋势,且感官评价显示异常风味明显。此外,不同阻光树脂添加量(8%~12%)的PET瓶不同添加量之间差异不明显。

Abstract:Polyethylene terephthalate(PET)is a thermoplastic polyester material.The PET bottle is a commonly used packaging form for dairy products.Mixing functional resin materials in PET raw materials and thus changing the barrier properties of the packaging can provide strong protection for milk storage.In this study,the ability of three kinds of PET bottles(common PET transparent bottle,PET transparent bottle with 2% reactive oxygen,and PET non-transparent bottle with 8%-12% light-blocking resin)to avoid light oxidation of pasteurized milk was compared.The conditions of display in retail stores and supermarkets were simulated,and the samples were stored for 31 days.The changes of dissolved oxygen,riboflavin,and flavor compound composition during the storage period were detected,and the light-blocking and oxygen-blocking characteristics of packaging materials were determined;correlation analysis was conducted through sensory tests.The results showed that an appropriate light barrier could avoid the oxidation of pasteurized milk due to light during longterm storage and prevent the abnormal flavor.2% oxygen barrier did not provide significant protection.The riboflavin and oxygen content of pasteurized milk in common PET transparent bottles and PET transparent bottles with 2% reactive oxygen decreased during the whole storage period,and the abnormal sensory flavor was significant.There was no significant difference in the PET bottles with light-blocking resin addition amount at 8%-12%.
