中文摘要: 为探究揉捻时间和炒制时间对枇杷叶茶品质的影响,以当年生枇杷夏梢幼叶为原料,经杀青后采用先揉捻后炒制的加工顺序,分别设置4个揉捻时间和5个炒制时间,对茶成品主要功能性成分、营养品质、水浸出物质量分数和挥发性香气成分进行测定,并运用主成分分析法进行评价。结果表明:随揉捻时间的延长,游离氨基酸含量整体呈上升趋势,维生素C含量整体呈下降趋势,总黄酮、茶多酚、总三萜酸含量在揉捻7 min时达到最高;总黄酮、茶多酚、总三萜酸、可溶性总糖、游离氨基酸、维生素C含量随炒制时间延长呈先上升后下降的趋势。对枇杷叶茶进行挥发性香气成分测定分析发现,顺式-3-己烯醛、苯乙醛、β-大马酮、1-辛烯-3-醇、萘、D-柠檬烯为关键性香气成分,邻-异丙基苯和α-蒎烯对枇杷叶茶风味形成具有重要的修饰作用。主成分分析结果显示,以枇杷幼叶为原料,摊晾3 h后蒸汽杀青75 s,揉捻3 min再炒制23 min所制得的叶茶品质更佳。
Abstract:To investigate the effects of rolling and frying time on the quality of loquat leaf tea,the young loquat summer shoots were taken as raw materials. After fixing,the shoots were processed in the sequence of rolling and then frying,with four rolling time gradients and five frying time gradients. Then,the main functional components,nutritional quality,water leachate mass fraction,and volatile aroma components of the finished tea products were evaluated by principal component analysis. The results showed that,as rolling time extended,the free amino acid content tended to increase,while the vitamin C content tended to decrease. The total flavonoid,tea polyphenol,and total triterpene acid contents reached their highest at 7 min of rolling. As the frying time extended,the total flavonoid,tea polyphenol,total triterpene acid,total soluble sugar,free amino acid,and vitamin C contents tended to increase and then decrease. Volatile aroma component analysis of loquat leaf tea revealed that the key aroma components were cis-3-hexenal,phenylacetaldehyde,β-damascenone,1-octen-3-ol,naphthalene,and D-limonene,while o-isopropylbenzene and α-pinene were important modifiers for the flavor formation of loquat leaf tea. The results of the principal component analysis showed that the quality of leaf tea made from young loquat shoots was better after drying for 3 h,steam fixing for 75 s,rolling for 3 min,and then frying for 23 min.
