中文摘要: 为丰富慕斯及红茶的产品形式,满足消费者对健康化、多元化食品的需求升级趋势,该文以木糖醇代替白砂糖作为甜味剂,以感官评分、质构特性为评价指标,通过单因素试验研究红茶粉与牛奶料液比、木糖醇添加量、吉利丁添加量对无糖红茶慕斯品质的影响,在此基础上,以感官评分为响应值,通过响应面法优化无糖红茶慕斯的配方。结果表明,无糖红茶慕斯的最佳配方为红茶粉与牛奶料液比1∶20(g/mL)、吉利丁添加量2.6 g、木糖醇添加量16 g。在此条件下制得的无糖红茶慕斯呈浅棕色,颜色均匀有光泽,入口绵柔,清甜不腻,兼具独特的红茶香气和浓厚的奶香味,感官评分为91±1,与响应面模型给出的预测值接近。

Abstract:To enrich the product forms of mousse and black tea and to align with the growing consumer demand for healthier and more diverse foods,this study used xylitol as a sweetener in place of white sugar,using sensory scores and texture characteristics as evaluation indices,the effects of the ratio of black tea powder to milk volume,the amount of xylitol added,and the amount of gelatin added on the quality of the mousse were investigated through single-factor experiments. On this basis,with sensory score as the response variable,the formulation of unsweetened black tea mousse was optimized using response surface methodology. The results showed that the optimal formulation of unsweetened black tea mousse consisted of a black tea powder to milk volume ratio of 1∶20 (g/mL),2.6 g of gelatin,and 16 g of xylitol. Under these conditions,the mousse was light brown in color,evenly colored with a glossy appearance,soft and smooth in texture,pleasantly sweet without being cloying,and featured a distinctive black tea aroma combined with a rich milky flavor. It achieved a sensory score of 91±1,closely matching the value predicted by the response surface model.
