中文摘要: 鱼糜作为一种营养丰富的海洋食品原料,在食品工业中用途广泛。然而,在加工和储存过程中,鱼糜凝胶品质受多种因素影响而发生劣变。皮克林乳液作为一种新型食品乳化体系,因其优异的稳定性受到广泛关注,特别是多糖基皮克林乳液,因其具备独特界面性质,且对鱼糜凝胶特性存在显著影响而成为当前研究热点。研究表明,适量添加多糖基皮克林乳液可以提高鱼糜凝胶特性,改善鱼糜制品品质。该文综述鱼糜凝胶特性的主要影响因素、不同类型多糖基皮克林乳液及其对鱼糜凝胶特性的影响,并探讨多糖基皮克林乳液与鱼糜凝胶蛋白之间的相互作用机制,以期为提升鱼糜制品品质及开发新型食品乳化体系提供理论依据和技术指导。
Abstract:As a nutrient-rich marine food material, surimi is widely used in the food industry. However, during processing and storage, the quality of surimi gel is prone to be affected by multiple factors, leading to gel deterioration. Pickering emulsion, as a new type of food emulsification system, has received extensive attention due to its excellent stability. Especially, polysaccharide-based Pickering emulsion has become a research hotspot because of its unique interfacial properties and significant influence on the gel properties of surimi.Adding an appropriate amount of polysaccharide-based Pickering emulsion can improve the gel properties of surimi and enhance the quality of surimi products. This paper reviewed the main factors affecting gel properties of surimi, different types of polysaccharide-based Pickering emulsion, and their effects on gel properties of surimi, and it explored the interaction mechanism between polysaccharide-based Pickering emulsion and surimi gel proteins, aiming to provide theoretical support and technical guidance for improving the quality of surimi products and developing new food emulsification systems.
