中文摘要: 将火麻粕与粳米碎米粉碎后按一定比例复配成火麻粕-大米混合粉,探究不同配比的火麻粕米粉糊化特性的变化规律,初步筛选火麻粕添加比例,通过单因素和正交试验,考察水、火麻粕、食盐添加量及挤压最高温度对米粉食用品质的影响,明确火麻粕米粉的最优配方。结果表明,火麻粕添加量在2%~4%时,对米粉品质影响较小。试验结果表明,当添加20%水、2%火麻粕、1.0%食盐,挤压最高温度在120 ℃时,火麻粕米粉外观有光泽、表面光滑细密、口感爽滑筋道。

Abstract:In this study, hemp meal and broken japonica rice flour were compounded at a certain ratio into hemp meal rice noodles. The study aimed to explore the gelatinization characteristic changes of hemp meal rice noodles made with different ratios and to primarily select the optimal addition ratio of hemp meal. Through single factor and orthogonal experiments, the study explored the effects of the addition amount of water, hemp meal, and salt, as well as the maximum extrusion temperature on the edible quality of rice noodles. Then, the optimal formula was determined. The results showed that the addition amount of hemp meal at 2% to 4% had relatively little effect on the quality of rice noodles. When adding 20% of water, 2% of hemp meal, 1.0% of salt, and at a maximum extrusion temperature of 120 ℃, the developed hemp meal rice noodles had luster, a smooth and fine surface, and a smooth texture.
